Ingredients:

  • 1.5 lbs raw chicken breast
  • 1 bottle of Sweet Baby Ray’s buffalo sauce
  • 1-2 romaine hearts or pre-shredded cabbage
  • 10 whole wheat tortillas (Mission brand recommended)
  • Homemade ranch (250g 4% fat cottage cheese + 1/2 ranch seasoning packet)

Instructions:

  1. Place chicken in an Instapot or slow cooker. Cover with buffalo sauce and slow cook for 4 hours. Shred the cooked chicken and mix it with the leftover sauce.
  2. Prepare the ranch by blending cottage cheese and ranch seasoning until smooth. Refrigerate.
  3. Assemble the wraps: Spread a dollop of ranch on a tortilla, add 3oz of shredded chicken, and top with fresh romaine or cabbage.
